Früher war Prosecco gleichzeitig ein Anbaugebiet und eine Rebsorte, was zu Verwirrung und Missbrauch führte. Heute ist Prosecco ein klar abgegrenztes Gebiet in Venetien und Friaul-Julisch Venetien und nur Weine aus der Sorte Glera (wie die Sorte nun zu bezeichnen ist), die in diesem Gebiet gewachsen, verarbeitet und gefüllt wurden, dürfen die Bezeichnung Prosecco D.O.C. führen. Um die große Nachfrage abdecken zu können, wurde das Gebiet etwas erweitert und das Kerngebiet um die Ortschaften Valdobbiadene und Conegliano wurde dafür zur D.O.C.G. erhoben. Wer ausschließlich den besten und traditionsreichsten Prosecco trinken will, sollte also auf das „G.“ achten.
Neben Schaumweinen werden auch stille (ohne Kohlensäure) Weißweine (Prosecco Spento, Prosecco Tranquillo) aus der Rebsorte Glera gekeltert, die allerdings selten über die Landesgrenze hinauskommen. Prosecco Spumante (Schaumwein) muss im Flaschengärverfahren oder in der Tankgärmethode zu seiner Kohlensäure kommen. Dem Prosecco Frizzante (Perlwein) darf die Kohlensäure auch künstlich hinzugefügt werden. Natürlich entstandene Kohlensäure bleibt länger im Glas!
